		<description><![CDATA[This is how I enjoy Mountain Lions. Mountain Lion Back Strap with Apples and Blueberry Jam

 Note: Mountain Lion is much like pork and almost any pork recipe will work.
 
Serves 4
 
Ingredients Needed
 
1- 2 lb Mountain Lion Back Strap
 3 Granny Smith apples peeled and cut into 1/4 inch slices
 1/2 cup of brown sugar
 1/2 stick of butter
 1/2 cup of water
 3 tablespoons of olive oil
 Salt and Pepper
 One jar of blueberry jam
 
In a large frying pan heat 2 tablespoons of olive oil on  high heat. Salt and pepper back strap then place in pan and sear and brown all sides of the back strap.
 
Remove from the pan and cover with aluminum foil and bake in a 375 degree oven for 1 hour until done.
 
In the meantime, sauté apples in 1 tablespoon olive oil, 1/2 stick of butter and brown sugar for 5 minutes.  Add water until apples have a soft texture and the butter and brown sugar have thickened.
 
When the back strap is done slice onto a serving platter, surround with apples and serve with warm blueberry jam on the side.]]></description>
